Biriyani Masala: 6 cardamoms, 1 stick cinnamon, 6-7 cloves, 1/2 mace, 1/2 star anise, 1/2 tsp black peppercorns, 1 tbsp coriander seeds, 1/2 nutmeg, 1 black cardamom, 1 tsp shah jeera
Green Masala: 15 garlic cloves, 2 green chillies, 1.5 inch ginger, handful of coriander leaves, 4-5 sprigs of mint leaves.
Rice: 1.5 cups organic basmati rice, 8 cups water, 3 cloves, 3 cardamoms, a small piece cinnamon, 1/4 mace, 1 star anise, 3/4 tsp shah jeera, 1 bay leaf, 1 black cardamom, pink himalayan salt as needed.
Vegetables: 1 cup cauliflower, 1 medium carrot, 1/2 cup beans, 1/2 capsicum, 1/2 cup green peas.
Masala: 2 tbsp cashewnuts, 2 tbsp raisins, 2 tbsp wood pressed groundnut oil, 2 onions, sliced, 1/2 tsp turmeric powder, 1 tsp kashmiri chilli powder, 1/2 cup vegan curd + 1/4 cup water, pink himalayan salt as needed, 2-3 strands of saffron.
2 tbsp extra vegan curd, biriyani masala as needed, Juice of 1 lemon, coriander leaves to garnish, fried onions and rasisins to garnish and to layer the dum.
